Chicken Rogan Josh

Traditionally rogan josh was a main course prepared for special occasions like weddings and during as Eid. 

But it is one of the most popular Indian curries, and you will find it on every Indian dine-in and takeout menu. It is often cooked with lamb, but this chicken rogan josh is quicker and just as tasty! 

The curry gravy packs a big punch of flavor, but everything can easily be found in the grocery store.

Spices for Rogan Josh

Don’t be put off by the length of the ingredient list. You probably have most of the spices in your pantry, and those you don’t can easily be found in the grocery store. Those in bold have extra notes below the list.

The spices you need are:

  • Paprika
  • Ground coriander
  • Ground cumin
  • Turmeric
  • Cardamon
  • Cinnamon
  • Cayenne pepper
  • Garam marsala
  • Ground fennel
  • Cloves

Paprika – use regular or sweet paprika. Traditionally the red color would come from Kashmiri chilli powder, which is very different from the chili powder you buy in the US; it is ground Kashmiri chillies and is a vibrant red color and with a sweet, mild heat. 

Cardamon – you can use ground cardamon or the whole green pods.

Cinnamon – traditionally, this is a cinnamon quill, but you can substitute with ground cinnamon. Both have been noted in the recipe card.

Cayenne pepper – Use this to replace the mild spice that you would get from Kashmiri chilli powder, you can easily adapt the recipe to suit your taste and spice levels.

Garam marsala – this is an Indian spice blend that you can buy in most grocery stores. It adds extra depth to curries. If you can’t find it then you can add mild curry powder instead.

Ground fennel – this is a wonderful spice, and it can be used in Indian and Italian cooking. It has a very light licorice taste. You can buy the ground powder in most grocery stores, or pick fennel seeds and bash in a pestle and mortar.

Cloves – You can either use whole cloves or ground cloves. Both have been noted in the recipe card.

Ingredient Notes

GHEE – The recipe calls for ghee, this is clarified butter. So butter that has been cooked down and then had the milk solids removed. It has a more intense butter taste. You can usually find it in grocery stores, but butter is a perfect alternative.

CHICKEN – the recipe uses chicken thighs as they won’t dry out during the cooking time. If you want to use chicken breast, prepare the curry as instructed, but at step 6, don’t add the chicken, just simmer the sauce for 30 minutes and then add in the chopped chicken breast for the last 15 minutes of simmering.

TOMATO PUREE/PASSATA – this is a thick, smooth puree. It is made with uncooked tomatoes that have been pureed and strained. It has an intense tomato flavor and is thicker than canned crushed tomatoes. In Australia, it is known as passata, but in the US it is more commonly labeled Tomato Puree (often with passata written underneath) Tomato paste is a much stronger product, so if that is all you have then use 3 tablespoons and thin it down with 1 tablespoon of warm water.

What do you need to make chicken Rogan Josh?

Chicken — Chicken Rogan Josh is great with both chicken breast and boneless thighs. I prefer to make it with breast fillets because of the lower fat content, but thighs are more flavourful.

Olive oil + butter — Using a mix of olive oil and butter will infuse the chicken curry with a buttery flavour while keeping the smoking point high. You can use ghee instead for the same amazing flavour.

Garlic and ginger — Fresh garlic and ginger are best in curries, and I don’t recommend substituting them with shop-bought pastes because you’ll be missing out on flavour.

Spices — This chicken Rogan Josh has rich, bold flavours, and it all starts with frying a cinnamon stick and a couple of cardamom pods in the olive oil and butter mix. You’ll then need a mix of paprika (not smoked), ground coriander, ground cumin, ground cinnamon and cayenne pepper. To speed up the process, you can use a shop-bought Rogan Josh curry paste instead.

Tomato paste — Allow the tomato paste to cook for a minute with the spices before adding the passata for maximum flavour.

Passata (tomato sauce) — I make this curry with passata, but you can also make it with chopped tomatoes if you don’t mind it being a bit chunkier.

Natural yoghurt — A thick natural yoghurt is perfect for this recipe (Greek-style yoghurt is fine). You can also top individual bowls with extra yoghurt when serving the curry.

  • Chicken – use 4 boneless skinless chicken breasts or 8 boneless skinless chicken thighs. Cut the chicken into large bitesize chunks.
  • Whole Spices – cinnamon stick, cardamom pods, cloves and bay leaves.

  • Onion, Garlic & Ginger – finely chopped for the base of the curry. You could use a food processor to make a paste..

  • Fresh Coriander – for garnish.

🔪 How to make chicken rogan josh

One: Heat the olive oil in a pan (with a lid) over a medium-high heat and cook the whole spices for 1 minute.

Two: Turn the heat down to medium-low and add the chopped onion, garlic, and ginger. Cook for 5 minutes until the onion is soft.

Three: Stir in the ground spices and cook for 2 minutes.

Four: Add the chicken and cook for 4-5 minutes until changed colour.

Five: Pour in the passata, chicken stock, tomato puree, and sprinkle in the sugar, salt, and pepper.

Six: Put a lid on the pan and simmer on low for 30 minutes. Serve with freshly chopped coriander.

💭 Expert tips

  • If you’re serving this curry to kids or people that don’t like a lot of spice, add a spoonful of Greek yogurt at the end of cooking and place more on the table for people to dollop on top!
  • Make sure the pan you use has a lid. Simmering the chicken rogan josh on a low heat with a lid on the pan, ensures the chicken doesn’t dry out.

What is a rogan josh curry?

One would be tempted to think that all curries are pretty much the same, given that they use pretty much the same kind of spices, but actually, each of them have their own cooking technique, and aroma that is so unique.

Rohan Josh is a meat dish of Kashmiri origin, and is traditionally cooked with red meat, especially lamb. Now, there are lots of variations, as you can imagine, some people say this curry does not use yogurt nor tomatoes, but western interpretations of this curry tend to add both of them.

In the UK, where curry is considered a national dish, lots of recipes have been adapted to appeal to our taste buds, which means not all of them are pure traditional recipes. But, they are as good and tasty as one can get.

This chicken rogan josh is my own version of the popular dish, I opted to use onions and tomato puree as a base for the curry sauce, and a range of spices like: chilli powder, ground cumin, ground coriander, paprika, garam masala and ground cinnamon. Plus, the usual culprits: ginger, garlic and green chillies.

Ingredients used

  • chicken breast – it’s my preferred part of the chicken to use in curries, but chicken thighs or legs can work too
  • onion – it can be either yellow, red or shallots
  • garlic
  • ginger – I used fresh ginger, but you can use ground ginger if you don’t have fresh
  • red chilli – rogan josh is a spicy curry, if you don’t have red chillis, you can use chilli powder or cayenne pepper
  • paprika – it adds the red colour the dish is famous about
  • ground cinnamon – another unusual addition to an Indian curry recipe, the cinnamon adds a touch of sweetness
  • water -since there is no need for a tomato sauce here, the water is the only liquid that helps the chicken cook

Step-by-step photos and instructions

The curry sauce is what makes this chicken rogan josh so special; it’s beautifully fragrant and coats the chicken pieces very well.

  • chop the onions, garlic and ginger, then blend them until you get a smooth paste
  • heat up the oil in a large pan, add the paste, and fry on a low heat for 3-4 minutes until slightly golden
  • add the spices and green chillies, and add the chicken and mix to coat
  • pour over the water and add the tomato puree, and leave to cook on a medium heat for 15-20 minutes until the chicken is cooked through and the sauce has thickened
  • season with salt and pepper to taste and garnish with coriander (cilantro)

Tips and FAQ

Unlike many chicken curries that are very saucy, rogan josh doesn’t have as much sauce, this only coats the chicken when it’s cooked, but there isn’t much around.

The sauce is traditionally spicy, but you can dial down on the heat if you’d rather go for a more mild version, especially if you cook for children too.

The sauce cooks very quickly, so keep an eye on it, as it can easily burnt. There is no need to add any other liquid to the sauce, or it won’t be rogan josh anymore.

Can you freeze chicken rogan josh?

Absolutely! To defrost, you can either microwave it, or add it to an ovenproof dish, and heat it up until it’s bubbling hot.

Can you use leftover chicken for rogan josh?

Yes! Just make the sauce, then add the leftover chicken towards the end, it only needs to heat it up, since it’s already cooked.

Anglo Kashmiri Chicken Curry

This chicken rogan josh recipe is a rare request from readers and followers on social media.

My Kashmiri influenced lamb rogan josh recipe is one of the most popular on my site and I regularly get asked if it can be made with chicken.

The answer is of course yes and no. You could just swap out lamb for chicken and it would be tasty. But chicken and lamb are very different meats and you deserve better.

We have become accustomed to thinking that the protein element of a curry is entirely exchangeable. As far as I am concerned it ain’t good enough and we do not do it with any other cuisine!

In all of my recipes, I ensure that the sauce is tailored to the core part of the meal.

My lamb tikka masala and chicken tikka masala recipes, and pork vindaloo and beef vindaloo recipes are other examples of this approach.

As a result, I have gone back to the roots of my original recipe and rebuilt it for chicken.

Out goes the marinade period and the yoghurt that helps cut through the fattier lamb. Some of the spices get scaled back to recognise that chicken is not blessed with as much flavour as lamb.

And in comes a much more saucy curry reminiscent of the sort of chicken rogan josh you would find in a curry house.

Frequently Asked Questions

Do I have to use the whole spices?

No, not at all, you could use ground spices or even an off the shelf garam masala if you prefer.

I tend to use whole spices if I do not use the spices often. This is because ground spices lose their flavour much more quickly.

What is mace?

Mace is the outer coating of the nutmeg seed. It is not often associated with Indian food, but Jawantry features in many regional garam masala mixes.

I love the stuff and use it in everything from my chicken tikka biryani to my homemade Cumberland sausage… So yeah, kinda versatile!

Can this be made in advance?

Absolutely, this is a perfect curry to make up ahead of time. You can refrigerate after cooking for 2-3 days and it will be at its very best about a day after initially cooking.

To reheat add it to a medium (20cm) saucepan, add a lid and slowly bring it up to temperature.

It will freeze for up to 3 months. I would personally place it in a heavy-duty freezer bag and reheat slowly using the “boil in the bag” technique.

Serving Suggestions

If you have cooked one of my curry recipes before you probably know where this is gonna go… Naan bread, of course!

My tandoori style naan bread is the perfect gravy mop for the rich gravy from this chicken rogan josh.

Of course, bread is not the only “fruit” when it comes to curries and rice is a perennial favourite. I typically stick to plain boiled rice, although a nice pilau rice would be a great addition.

If you are looking for something to change up your curry sides then how about potatoes?

Both my roast Bombay potatoes or aloo methi recipes would be perfect with this delicious curry.

Of course, no Indian fakeaway is complete without poppadoms!

Chicken rogan josh, a dish that is Kashmiri in origin, my version is coloured by the British Indian curries I grew up with in the 80’s and 90’s.

Ingredients

  • 350g (12oz) Chicken Thighs
  • Thumb Sized Piece Ginger
  • 3 Garlic Cloves
  • 1 Star Anise
  • 3 Green Cardamom Pods
  • 3 Cloves
  • 1 Blade Mace
  • 1 Tsp Black Pepper Corns
  • 2 Tbsp Cooking Oil
  • 150g (1 Cup) Onion
  • ¼ Tsp Ground Cumin
  • ¼ Tsp Ground Cinnamon
  • 1½ Tsp Kashmiri Chilli Powder
  • ¾ Tsp Ground Coriander
  • ¾ Tsp Ground Turmeric
  • ½ Tsp Salt
  • 2 Tbsp Tomato Puree
  • 2 Tomatoes
  • 150ml (⅔ Cup) Water

Instructions

  1. Cut the chicken thighs into 2-3cm pieces.
  2. Blitz together the ginger and garlic with a little water to form a paste and massage it through the chicken.
  3. Cut the onion in half and peel it, then cut it into thin half-moon shapes about 3mm thick.
  4. Add the cardamom pods, black peppercorns, cloves, mace and star anise to a dry pan frying pan (not non-stick) and toast off over a medium-high heat for a couple of minutes.
  5. Grind these spices in a coffee grinder or a pestle and mortar.
  6. Reduce the heat in the pan to medium and add the cooking oil.
  7. When the oil is hot throw in the onions, and cook until they start to go golden brown which should take 10 minutes.
  8. Add the chicken along with the ground cumin and cinnamon, coriander, the spices that we ground up earlier, the Kashmiri chilli powder, and turmeric, then stir to combine.
  9. Season with the salt and cook for 5 minutes making sure you keep it moving as it will want to stick to the pan. This is normal and helps build flavour.
  10. Cut the tomatoes into 8 wedges each.
  11. After 10 minutes add in the tomato puree, tomato wedges and water and stir well.
  12. Reduce the heat to low add a lid and simmer for 15 minutes.
  13. Remove the lid have a taste and add more salt if needed then cook uncovered for a final 3-5 minutes to thicken if desired.
