SALMON FETTUCCINE WITH SOUR CREAM CAESAR SAUCE RECIPE
Other than making the sour cream sauce for this salmon pasta (which takes literally 5 minutes), you’ll just need to sauté the salmon (easy!), fry the bacon (easy!), and boil the pasta (SO easy!). And just like that, you have the makings of a seriously satisfying and impressive meal.
Toss the salmon, bacon, sour cream caesar sauce, and herbs together with the pasta.
And dinner is served! I think people often feel meals involving salmon are automatically fancy. But it’s one of the easiest things to cook. You literally rub some salt and pepper on it and cook it in a little bit of olive oil for a few minutes. But hey, let’s let them think it’s difficult, right?? Let them think you spent hours slaving over the stove making this salmon fettuccine for them.
I am seriously so addicted to this dish. I loved every single bite of it and can’t get enough. From the salmon to the bacon to the PERFECTLY sauce-coated fettuccine, I can confidently confirm that I could be happy eating salmon pasta every day for the rest of my life.
And I’m also thrilled that I found a new favorite way to make caesar dressing. Sour cream is legit my new best friend and I can’t believe what a rich and creamy dressing it makes. Can I please mention one more time how easy this sauce is to make?? All you do is whisk everything together in a bowl. Sorry, I just can’t get over that.
This is a great dish for serving to guests, but I recommend making a double batch of the caesar sauce to keep in your fridge… In addition to using this on pasta, you can, of course, also use it as a salad dressing. Seriously, once you try it, you’ll want to put it on everything!
Sorry donuts, salmon fettuccine with this sour cream caesar sauce (and bacon!) is the #1 food I want to be stuck with forever. Luckily we don’t live in a world where we have to make decisions like that and I can have my caesar salmon pasta and eat my donut for dessert. Life is good.

Ingredients
- 2 salmon fillets
- 1 tbsp olive oil, plus 1 tsp if roasting
- 175g penne
- 2 shallots or 1 small onion, finely chopped
- 1 garlic clove, crushed
- 100ml white wine
- 200ml double cream or crème fraîche
- ¼ lemon, zested and juiced
- ½ small bunch dill, finely chopped
Method
- STEP 1
You can either steam or roast the salmon, depending if you want to turn the oven on or not. To roast, heat the oven to 200C/180C fan/gas 6, place on a baking tray, drizzle with oil and roast for 12 mins until opaque and the flesh starts to flake when pressed. To steam, place the fillets skin-side down in a steamer, and steam over a pan of simmering water for 8-10 mins until cooked.
- STEP 2
While the salmon is cooking, boil the pasta for 10 mins until al dente, then drain, reserving 100ml of the pasta water.
- STEP 3
Heat the oil on a medium heat in a wide frying pan and fry the shallot for 6 mins until softened, but not turning golden. Add the garlic and fry for a minute more until fragrant. Add the wine, bubble for a few minutes until reduced by half, then add the cream and season well. Bring to a very gentle simmer.
- STEP 4
Flake the cooked salmon into big chunky pieces, leaving the skin behind. Add to the sauce with the cooked pasta. Add the lemon zest, a squeeze of the juice and most of the dill. Add a splash of the pasta water to the sauce to coat the pasta if you need to. Toss gently to keep the salmon in big pieces. Check the seasoning, if using double cream you may need a squeeze more lemon juice. Grind over some black pepper and scatter over the remaining dill. Serve with a green salad.
Ingredients needed
- Salmon. I used salmon fillets but you can use canned salmon too, if preferred. This same recipe would also be delicious with tuna, mackerel or any other canned fish.
- Extra-virgin olive oil.
- Butter.
- Onion.
- Fresh garlic cloves.
- Cream. Heavy cream/whipping cream.
- Fresh dill. Fresh parsley, tarragon or chives will also be delicious and add loads of flavor.
- Fresh lemon juice.
- Salt and black pepper.
- Pasta. I used linguine but spaghetti, fettuccine, or penne will all work for this pasta dish.
How to make creamy salmon pasta
- Cook the salmon: The salmon for this creamy salmon pasta recipe is simply seared before being flaked into the sauce. Pat skin-on salmon fillets dry with paper towels then season generously with salt and pepper and drizzle with a few teaspoons of olive oil. Heat a nonstick frying pan or large skillet over medium-high heat then sear the salmon, skin-side down, for 4-5 minutes until the skin is crisp. Carefully flip over and cook for another 2 minutes. Remove from the pan and set aside while you make the sauce.
- Cook the pasta: Bring a large pot of salted water to the boil. Add the pasta and cook until al dente then drain and reserve a cup of cooking water.
- How to make creamy sauce for pasta: In the same pan, melt a tablespoon of butter and add an onion that you’ve diced finely. Cook for a few minutes until softened then add the crushed garlic. Allow to cook for 30 seconds until fragrant. Pour in the cream and add the fresh dill. You can substitute chopped parsley or tarragon for the dill if you prefer. Stir in a squeeze of fresh lemon then season with salt and plenty of freshly cracked black pepper. Simmer gently for a few minutes until the sauce coats the back of a spoon. Flake in the salmon (discard the skin if preferred or chop finely and add to the sauce) and toss in cooked pasta. Add a splash of the pasta cooking water to thin out the sauce if necessary then serve.
Can you freeze salmon pasta?
Cream sauces don’t always freeze very well as they can split once thawed. This recipe takes minutes to make and it’s much better when prepared fresh. However, the salmon can be cooked up to a day in advance and kept covered in the refrigerator before being flaked into the sauce. Similarly, the cream sauce can be made a day in advance before being reheated gently in a pan on the stovetop before tossing with cooked pasta.
